Step 1: Washing and Preparing Apricots
Start by washing the apricots thoroughly under running water. Once washed, gently dry them with a clean cloth or kitchen paper. Next, cut the apricots in half and remove the stone. You can decide whether to leave the skin on or peel them, depending on your preference but it is recommended to keep it since it contains natural pectin, which helps give the jam a thicker texture.
Step 2: Cook the Apricots
Place cut apricots in a large pot and add sugar. The amount of sugar depends on your personal taste and the natural sweetness of the apricots. A common proportion is 1 part sugar to 2 parts apricots. Also add lemon juice to give a touch of acidity and help the jam reach the right consistency. Let the apricots sit with the sugar for about an hour so they release their natural juice.
Step 3: Cooking the Jam
Turn on the stove to medium heat and bring the pot with the apricots and sugar to a boil. Stir gently and let it cook for about 20 to 25 minutes, or until the apricots become soft and the mixture thickens. While cooking, you can lightly mash the apricots with a wooden spoon to get a smoother texture. Keep stirring occasionally to prevent the apricot jam from sticking to the pan.
Step 4: Testing the Jam
To make sure the jam is ready, do the saucer test. Take a cold saucer and pour a drop of jam onto it. If the drop congeals and does not run when you tilt the saucer, the jam is ready. If the consistency is still not thick enough, continue cooking for a few more minutes and repeat the saucer test.
Step 5: Preservation of the Jam
Once it reaches the right consistency, turn off the stove and let the jam cool for a few minutes. Transfer the hot apricot jam to sterilized glass jars and seal them tightly. Turn the jars upside down for a few minutes to create a vacuum and allow for better storage. Store the jars in a cool, dark place.
