The tart is a timeless pastry classic, capable of winning the palates of young and old alike with its combination of fragrant shortcrust pastry and rich filling. Today, we will guide you to discover a summer variant: apricot and cherry tart. Get your hands and your apron ready, because this delicious recipe promises no small wow effect.

Ingredients:

  • 250 g of 00 flour
  • 125 g cold butter, cut into cubes
  • 100 g of powdered sugar
  • 1 egg
  • 1 pinch of salt
  • 200 g cherries, pitted and cut in half
  • 200 g apricots, cut into wedges
  • 2 tablespoons of brown sugar
  • 1 tablespoon of cornstarch
  • Juice of half a lemon
  • Lemon zest (optional)
  • Icing sugar to decorate

Begin by preparing the shortcrust pastry. In a large bowl, sift the flour and powdered sugar. Add the cold cubed butter and work the ingredients quickly with your fingertips until you have a sandy mixture.

Add the lightly beaten egg and the pinch of salt. Continue kneading the dough until it forms a smooth ball. Wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes.

Meanwhile, prepare the filling. In a bowl, mix the cherries and apricot segments with the brown sugar, cornstarch, lemon juice, and, if desired, lemon zest for a touch of freshness. Stir gently until the sugar and cornstarch are evenly distributed. Let stand for a few minutes to allow the juices to release.

Once the shortcrust pastry has rested, preheat the oven to 180°C (350°F). Take the dough again and roll it out on a lightly floured surface until it is about 3-4 millimeters thick.

Line a tart pan with the pastry, making sure to press the edges down well. Trim off any excess pastry. Pour the apricot and cherry filling over the shortcrust pastry base, spreading it evenly. You can decorate the surface with braided strips of dough or just leave it plain.

Bake the tart for about 35-40 minutes until the pastry is golden brown. Once ready, take the tart out of the oven and let it cool completely on the wire rack. Before serving, sprinkle the tart with powdered sugar for an extra note of sweetness. Your apricot and cherry tart is ready to be enjoyed! Accompany this summer treat with a scoop of vanilla ice cream or a generous dollop of whipped cream to enhance the fruity flavors even more.
