- 4-5 apricots

- almond flour
- 40 g of slivered almonds
- caster sugar
- lavender (optional)
- 1 egg
- 1/2 tablespoon water
- 1 pinch of salt
Cut the apricots and cherries into thin slices. Using a pastry cutter, cut out four rectangles from the puff pastry roll and sprinkle each with almond flour. Then, lay the previously cut fruit on top making sure to leave some space at the edges and sprinkle with sugar to taste. Add the slivered almonds and lavender and brush the remaining free puff pastry edge with beaten egg. Bake in the preheated oven for about 25 minutes, or until golden brown anyway. Remove from the oven and serve warm or at room temperature.
Cherry panna cotta cubes

To prepare it, you will need:
- cherries to taste
- apricots to taste
- 1 dl whole milk
- 3.4 dl of cream
- 1 lemon
- 1 vanilla pod
- 8 g of gelatin sheets
Rinse the lemon and grate the zest. Then wash the cherries and apricots and in the meantime soak the gelatin in a bowl of cold water. Pour in cream and milk and bring to a boil then add the squeezed gelatin and stir to dissolve. Pour 2-3 mm of panna cotta into the bottom of the pan and let it firm up in the freezer. Once chilled arrange the cherries and apricot pieces and pour in the remaining panna cotta to lock them in place. Chill in the refrigerator for 12 hours.
